I was always taught that a good BBQ jernt:
- Has no name. They're described as something like, "that joint west of town on Hwy 27";
- Is located in an abandoned gas station or ice house. There will be a big oak tree outside with a come-along chain hanging from a big limb;
- Is not air conditioned, but may have a ceiling fan with one blade missing;
- Does not have a cash register, all change made from a cigar box. And a credit card? Oh, hell no;
- Waitresses will weigh in at a minimum of 190 lbs., be barefoot and have maybe ten teeth left;
- Have only white bread served with margarine. But you didn't come for the bread;
- Has never heard of unsweetened tea;
- Will have a radio playing Country Music that you've never heard before but is awesome;
- Won't charge you tax and gives you a toothpick and a King Edward cigar with your change.
- Won't be there the next time you go as the cook got arrested for game law violations. Don't ask.

Good sauce is good sauce IMO. Doesn't really matter which style. And only a little is needed on the meat.

She's on one team for either shoulder or whole hog.
The guy, Big John, does the ribs for Natural Born Grillers and he's awesome. They helped us out a bunch this year.

It's been a while since I've been there, but Leonard's in Memphis used to be pretty good.

Cooper's BBQ in Llano, Tx, is the offshoot of the original in Mason, Tx. They have several branches now around Texas, but Llano's is the best!
Maxim sent a writer down to Llano a few years ago to do a story. He spent a week there working at Cooper's and Maxim ended up with a 6-7 page article on the place. So to answer your question, it's Cooper's Old Time Pit Bar-B-Q in Llano, Tx. The rest of you can shut your whore mouths.

Only if you are an out-of-towner touristy kind of person.
Do yourself a favor, make the 20 minute drive to Germantown and hit up the Commissary. All you can eat ribs on Monday nights. If you just can't make the drive to Germantown, go to Cozy Corner or Memphis BBQ company (not quite as far a drive from the downtown area) Whatever you do, if you see Corky's, keep on driving... that stuff sucks.

id never wait that long for food. I just can't see it being enjoyable having that many people around and waiting however long out in a huge line
