I’ve done it almost every way mentioned in this thread. My new go to is making a paste of olive oil, fresh minced garlic, kosher salt and freshly ground pepper. Cover steaks in paste and let sit for 2 hours at room temp.
Cook as you wish. I’m a grill guy but in your situation I think I’d go cast...

Everyone needs to go watch “Facing Nolan” on Netflix if you haven’t already. Great documentary. Nolan Ryan is the goat but really struggled with control in high school, college and the big leagues before putting it all together. In that regard, Skenes is light years ahead of Nolan Ryan.
