Wahoo have been striking daily this season but tend to tail off near summer. If you take the right charter - got a good chance for one or more of Tuna, Wahoo, or Mahi. Not a lot of Marlin around these parts but a lot of charters will waste your time targeting them. Check out Reelistik Charters or Ca...

From a native, I'd mention all those recommended above are good starts. I'd say Casa 43 - Mexican Restaurant (some of the best mexican I've had anywhere), for a friday night out Whiskey Mist/Lilies is always a good bet albeit very night club-esque.
