smoking some mac-n-cheese today

it was pretty damn good..used 2 cups of milk, smoked gouda, and smoked at a higher temp(325) on my weber kettle. indirect heat with hickory right on the grate over the coals..was done in about 30 minutes..

Ingredients:


* 1 16oz Pack of Elbow Macaroni

* ¼ Cup of Butter

* ¼ Cup of Plain Flour

* 3 Cups of Milk

* 8oz Cream Cheese (cut into small chunks)

* 2 Cups of Shredded Extra Sharp Cheddar

* 2 Cups of Shredded Gouda Cheese

* 1 Cup of Parmesan Cheese


Directions:


Preheat smoker to 225 degrees. Cook the macaroni per package instructions. Melt butter in a sauce pan. Once butter is melted, whisk in flour and cook over medium heat for two mins. Whisk in milk and bring to a boil. Let boil for five mins till thickened. Stir in cream cheese till smooth and add salt and pepper to taste. In a large bowl mix 1 cup of gouda, 1 cup of cheddar, parmesan, pasta and sauce until the ingredients are well mixed. Spoon mixture in a11 x 9 disposable pan coated with cooking spray. Sprinkle remaining cheese over the top. Place in smoker and cook for one hour @ 225 degrees till brown.
