Dry rub ribs are almost there... looking for the meat to shrink back off the bone just a little bit... and they'll be done.


Sizzly smokey crispy dry rubbed Memphis style ribs, done the right way.

Opening my last beer. It is a somber moment. It means ill be finishing them soon, whether they like it or not. But i think the timing is going to be perfect.

The theme for the presentation is different than the musical theme for the process.

As far as texture... and texture is very important....

Some illustrations of the texture...









The baby backs are falling off the bone, as expected. Coming off clean.

























































The dry rub Memphis style ribs have a little bit of nibble, as intended. But they are still coming clean off the bone once you get there... coming right off at the tooth, biting right off, not chewy at all... you can see the meat fibers below in the somewhat uniform nibble profile you'd expect to see in a nibbly dry rubbed rib. Crispy bark, spicy, tender, perfect.



























The helpers want some.... they get teased.

ETA- My wife, the UGA vet student, wants me to make sure to post that the dogs were not given those bones. Do not give your dogs cooked rib bones.

Looks good I have never understood how some people could cook/eat ribs with the membrane on them. Ruining a good piece of meat
