Dry rub ribs are almost there... looking for the meat to shrink back off the bone just a little bit... and they'll be done.
Sizzly smokey crispy dry rubbed Memphis style ribs, done the right way.

Deeprig, do you have a song in mind that might help me understand the theme of your cook?.......

Opening my last beer. It is a somber moment. It means ill be finishing them soon, whether they like it or not. But i think the timing is going to be perfect.

The final pics are coming.
The theme for the presentation is different than the musical theme for the process.
I need any and all voters to give this a listen, listen long enough to get your mind in the right place.
When that has happened, I can offer my presentation.
1939 Django "Sweet Georgia Brown"

You about to post a pic of some ribs you once ordered at Dreamland?

Again... soundtrack as part of the presentation...
1939 Django "Sweet Georgia Brown"
As far as texture... and texture is very important....
Some illustrations of the texture...
The baby backs are falling off the bone, as expected. Coming off clean.
The dry rub Memphis style ribs have a little bit of nibble, as intended. But they are still coming clean off the bone once you get there... coming right off at the tooth, biting right off, not chewy at all... you can see the meat fibers below in the somewhat uniform nibble profile you'd expect to see in a nibbly dry rubbed rib. Crispy bark, spicy, tender, perfect.
The helpers want some.... they get teased.
Thank you all for the opportunity to cook ribs on the internet for you. I mean that from the bottom of my heart.
Dawgs on Top!!!!!

ETA- My wife, the UGA vet student, wants me to make sure to post that the dogs were not given those bones. Do not give your dogs cooked rib bones.

I am not voting but that is some funny shite right there. No way you can be from GA and not be able to recognize a 'mater plant, no way.
