you shoulda sat in the rain through that thing
most dominate 3-0 win I've ever seen, it could have been 30-0 without the rain

Alex Brown vs. TENN in 1999 was a great individual game.
Teamwise...07 BCSNCG vs. Ohio State....held them to only 82 yds of offense.

How I remember it as well. We were the beneficiaries of a 4TD rain!

Every game he had between 15-20 tackles. I remember in a game at LSU on a 3rd down (and i think 4) LSU ran a reverse w/ Trendon Holliday. The whole Ole Miss defense went right (from my view point), Holliday went left. Patrick Willis ran him down. LSU had to punt.
ETA: Patrick Willis for those who didn't the previous comment.

Matt Grier vs Florida in 2002. Had back to back interceptions that took the game from 14-2 Florida to 17-14 Ole Miss. Ole Miss won 17-14.

I'll go with Cedric Donaldson's 2 picks against Florida in 1997.
Statistically, it may not have been the best performance ever. And I can think of a game where PP had two incredibly acrobatic INTs (Miss State, 2009).
But in terms of the gravity of the situation, how can you argue against Donaldson's game? Florida was #1, the defending champs, a double-digit favorite, and going for 10 wins in a row against LSU.
Donaldson's first pick (and pretty damn good return) set us up to go ahead 14-0 on Florida, seizing control of the game. He returned the second to the house for the go ahead score in the 4th.

AU put one epic beatdown on Ole Mis back in 1985. Not sure about the individual stats, but it was maybe the most lopsided AU game in the past 40 years.
Here are some excerpts from an Los Angeles newspaper (LA Times):

Auburn Coach Pat Dye called it "a very unusual game." That was an understatement.
Auburn, ranked 14th, piled up 606 yards of total offense and held Mississippi to nine yards in a 41-0 Southeastern Conference rout Saturday night at Auburn, Ala.
Bo Jackson rushed for 240 yards and two touchdowns. But that was only half the story as the Tigers' defense prevented the Rebels from getting a first down for the last 59 minutes of the game.
"I don't have any explanation (for) why it was so lop-sided," Dye said. "We're not that good, and they're not that bad."
Auburn, which fell from No. 1 last week in a 38-20 loss to Tennessee, rebounded with a vengeance as it scored on its first four possessions and raised its record to 3-1, 1-1 in the SEC.
"I was afraid a sleepy giant would wake up, and they did tonight," Mississippi Coach Billy Brewer said. "Dye has been dodging bullets.
"They physically manhandled
Kent Austin, was crushed by Auburn's defense, which held the Rebels to eight yards rushing and one yard passing as Ole Miss fell to 2-2-1, 0-1 in the conference.
Jackson, who came into the game as the nation's leading rusher with an average of 191.7 yards per game, carried the ball a school-record 38 times--including 10 rushes of more than 10 yards--as he passed the 200-yard mark in a game for the third time this season.
Auburn got 39 first downs, including an SEC record 28 by rushing.

I don't know about all-time, but some recent examples include CB Antonio Allen, who in our 2011 season opener vs ECU had 16 tackles including a TFL, a fumble recovery and 25 yard return for a TD, and forced two fumbles in the game.
Also, Clowney's 4.5 sacks at clemson last year will be remembered for some time.
Also, Norwood vs. Kentucky in '08 (I think) with 2 TDs off INT/Fumbles and Super Melvin 2 years ago vs. UGA (fake punt TD, fumble recovery TD off Clowney sack/FF)

Derrick Thomas was instrumental in Alabama’s 29-28 win over Army in the 1988 Sun Bowl. En route to earning the Jimmy Rogers Jr. Most Valuable Lineman Trophy, he blocked two field goals in the second quarter, broke up one pass and had a total of six unassisted tackles, including two for a loss.
Didn't get any sacks this game, but he was a force to be reckoned with
