Patrick Willis was a 2 star. Ole Miss was his only big offer.
I had no idea about that one. Pretty much anyone who went to a non-BCS college was not a 4-5 star in high school - Big Ben, Romo, Alfred Morris, Matt Forte, Antonio Brown, etc. Trent Edwards started on a Stanford team that went 1-11 in 2006, but he was drafted in the 3rd round by the Bills and made a total of 33 NFL starts.

Arian Foster
My first thought.
How about Tom Brady?

but I think Schaub and Matt Cassill never started in college.
Schaub was a 3 year starter.

Kurt Warner went to Northern Iowa and was good there. Obscure doesn't equal bad film.
-Terrell Owens might be the ultimate example of this.
He went to Benjamin Russell High School in Alexander City, Alabama. He was a track star but didn't start jn football until the end of his senior season when the teams star WR went down with an injury. He did good enought to get a scholarship to UT-Chattanooga. I've talked to people who knew him in HS and nobody thought he was good enough to even make it at UTC. He was a track star, so he was super skinny and not very athletic and bad hands.
He did well at UT-Chattanooga, but nothing special. He only got drafted because of his combo of size and track speed.
