The only Coach I've had the pleasure of meeting in person (not counting super casual interactions) was Coach Pat Summitt and while I'd always had major respect for her and what she accomplished, my respect went through the roof when I met with her. She is truly amazing -- beyond just being brilliant she was/is one of the finest humans I've ever met.
I could probably meet Majors, Fulmer, and Jones if I asked my LB/all-but-uncle and probably a few others if I really tried but those would be more difficult. I always feel weird about outright asking to meet coaches/famous people if that makes sense. I know that's prevented me from meeting more folks and I'd like to get over that but it's a part of my personality.
ETA: Also, very cool about Pruitt and Sherrer!

Met a few UGA players on spring break with notables being Jarvis Jones, Alec and Zander Ogletree, and Bacarri Rambo. For one Rambo definitely didn't just eat "brownies." The Trees are both extremely cool and Zander gave my best friend his number to hang out later. Somehow on the beach ended up having tackle drills and I went against T.J. Stripling's scary arse. Needless to say I didn't win that one

Met: Bo Jackson, Cam Newton, Pat Sullivan, Bill Curry, Pat Dye, Phat Phil, The Goode brothers, Gene Jelks, Antonio Langham, met Jay Barker in a doctor's office; he was working as a drug rep.
Played against Tarrant Lynch, RB on Bama's 92 NC team in Alabama State 4A Championship in 90.

I knew Adrian Sherwood,who played DB at Kentucky in the early 90's. He was the QB for my high school team.
(Ok, not really a big time player, but he had a few big time plays during his time at UK).

Know A'Shawn Robinson's girlfriend. Everytime I've been around A'Shawn he's cool, not douchey like some others I won't name.

Had classes with quite a few players, basketball and football, when I was at Arkansas. Matt Jones was a pretty nice guy in the class I had with him.

I met several players while at school. The most memorable was Jordan Jefferson. He's as big a douche as you'd expect.

In college I was a RM, resident mentor for an all guy's freshmen dorm.. most schools call them RAs.
If you know anything about college then you know that means I've dealt with a lot of greek life, the good and the bad. Long story short, the majority (10 out of 24) of my residents ended up pledging the same fraternity, ATO..
One day, one of my residents confided in me that a big time football player at SC was secretly pledging a frat. I didn't believe him and just ignored it. Chalked it up to freshmen craziness.
Until one night I was doing my hall checkups... I knocked on the door of one room and when the door opened there was Marcus Lattimore in the room just hanging out with his pledge bros.
I didn't say anything about it.. but Lattimore hung out on my floor for a few weeks and it was great. It was pretty much one of the highlights of my college experience..
I'm a member of a historically black greek letter organization so lots of football players were in my social circle and would come to our events and parties.. so I've met my fair share. Just think of the good ones that were at Carolina from ('09-'13) and I've probably hung out with them...

When I was in Junior High, I went to a revival led by Reggie White.
Many years ago, at the SEC CG fanfare, I met Fran Tarkenton.
ETA...Oh...I forgot...I used to live across the street from Terrance Cleveland and down the road from Randy Sanders...not quite as famous as some...but TC was a fantastic neighbor.
I also played HS ball with a former Vol who was a first round NFL pick...name withheld, because I don't want you stalking fricks to know where I grew up.

My daughter graduated last year from LSU and she met several top FB players of the last 2-3 yrs but the best association was her best friend was roommates with Kevin Gausman's GF his last season at LSU. She knew who he was and that he was good but she did not know how good until I told her... that was her Holy shite moment!

I grew up with Freddy Kitchens and was very much proud of his athletic prowess. His dad was hardcore and really pushed Freddy but he was embarrassing at Bama games.

I met Harry Galbreath and Travis Stephens through my older brother. Harry lived just down the road from my brother. I eventually joined them to workout at the gym. Harry was always a no show and drop in out of the blue and put 500+ lbs on the bench and rep that shite like it was nothing, then say "later baby boys" and he was out, maybe to be seen a week later to do the same shite. I eventually cut his lawn to earn some extra cash on my free time. I would always go into his garage and "borrow" his big garbage bags to bag the grass and he didn't like that. I kept doing it until he started hiding it and made me buy my own. He called all his friends "baby boy"..He had some really big super bowl parties as well...Big gentle giant, RIP Harry.
I met and talked with Travis a few times and will see him around town now and again. Super nice guy

I've met Namath at Chuck's in ttown.
Also met Tyler Watts, Santonio Beard (both nice guys) and John Parker Wilson. Wilson was a straight up dickhead.
