I’d imagine if there’s a difference it would be similar to the spices used for meat, pork and poultry vs seafood since they were also cattle farmers. But I’ve never noticed a big difference.

There is no such thing as a “prairie Cajun”. People north of Alexandria are merely country folks and their food and way of life reflect that

The cajun prairie was south of Alexandria. It’s largely gone now but it was a thing.

I use Bon Caca on just about everything. While I was working on the pipeline in South Louisiana, my coworkers in the area used it for all their cooking

I make my own blackening seasoning, everyone who tries it says it's the best they've ever had. Guess I should bottle the stuff give it a trendy name, cool label and charge way too much for it? Seriously guys, it's not hard to make your own seasoning mixes from the raw ingredients..and you can tune it to your liking.

It’s just a novelty item getting sales off a clever name. There is a company is Opelousas or nearby that will make any spice blend you want, package it and print the label.
