I freely admit I had to re-read the title when I first thought, "Dang, not a single East kid is worthy of the list?" :)
Good list. Alabama and LSU look like the defensive leaders of the SEC West, but A&M and Auburn looking pretty good.

Oh... then why list just 3? This is kinda dumb. If you want us to rank them then let us have the lot. It also appears that you ranked them already with the way you formatted them.

There are a lot of LSU and Alabama guys in those lists.

Indicative of the distribution of the defensive talent in the division in my opinion- though each team did have at least one player on the list

I can't argue too much with this. Honestly Arkansas was horrible in quite a few categories on defense.
The problem is that a team can change from year to year more then most would think. Two years ago no one picked Arkansas to trot out a shutdown defense but we did.
And we followed it up with a defense that never heard of the forward pass.
I respect your math and what you did here, but who knows? Until we have seen how teams play this year we are sort of guessing.
