I don't remember last time Clemson was relevant. were they good in the 70's or something? 2013 is the first time FSU competed for NC since 1999? FSU under Bobby Bowden since 2001 was hot garbage, averaging 4-5 losses per year in the ACC. Playing Clemson or FSU is much easier than playing Bama and Florida like Tennessee does every year.
Look at the names. They're all CFB elites. Tennessee did NOT have to schedule them. but we did anyways.
Oklahoma
USC
Notre Dame
Ohio State (although they backed out last year)
Nebraska
Also Oregon when they made the BCS championship game in 2010, Cal when they were top 10 teams
Tennessee scheduled all top 5 teams. UCF, Clemson, ECU, UNC, etc doesn't even belong in the same galaxy.

then my question was, how is it that Vol fans consider their OoC schedule so much tougher?

I really don't have the patience or give a frick for this tonight. But I'll simply close with this.
Who will finish higher in the polls ... Clemson and UCF, or Oregon?
When SCAR was playing LSU and Auburn during the BCSCG years, just recently I might add ... who finished the season ranked higher, Auburn and LSU or Bama?
When SCAR adds UCF on top of Clemson, who plays the tougher OoC schedule? Same when SCAR adds UNC ON MOTHER frickING TOP OF CLEMSON ... (upper cased so you dumb fricks would pay attention to what I am saying) .... who has the tougher OoC schedule?
When we're playing NC State when they have Russell Wilson both years, or Philip Rivers and Tory Holt both years or UCF with Dunte Culpepper et al future NFLers or Bortles this year etc etc etc ... frick it. Nevermind ... there is no reasoning with vol fans when it comes to this scheduling crap they think they are scheduling gods or something. frick it.

Tennessee has played every SEC BCS champion except Auburn 2010 (when we played runner up Oregon). We also faced runner up LSU in 11 in addition to champion Bama.
Not like we don't get to face LSU and AU. We play them just as often as you guys (except we've obviously faced them in SEC titles more often). The difference is our permanent opponent is Bama while yours is Arky.

Oregon will finish highest among three. Also which is a tougher match up? playing Oregon at Autzen or playing Clemson/UCF?

How many weeks did Bama stayed top 3 in polls in the last 5 years? Tennessee also played 13-1 LSU team in 2011, and BCS champ LSU team in 2007.

I don't even know what conference UCF plays in. They've always been equivalent to programs like UAB. adding .500 UNC team is nothing to brag about either compared to playing Oregon at Autzen.

Scheduling gods is correct. Past 20 years Tennessee did voluntarily schedule toughest OOC matchups than any other schools in the SEC, maybe even in the whole country.
