The rating listed is the team's peak rating -- their highest rating of the season. Look at the"date of peak" column. In 2009 Florida's case, they had that rating just before facing bama.
This bama team's rating was before shitting the bed against Chattanooga this past weekend.

Yeah that's a shitty list. But I agree 2011 Bama was Saban's best, including this years.

This was said of the 2005 USC team that lost to Texas in January of 2006.
I remember hearing ESPN, in particular, mentioning several times that week the Trojans were the best of all time. So I was really glad when Texas beat them in that classic game.

The 2011 LSU team was the best LSU team all time until they benched Lee. After Jefferson took over, I'll give the nod to the 2003 and 2006 Tigers.

It's hard to say which team in history was best. They can't play each other. But, you can say who dominated their competition better. I think that goes to the 95' Nebraska team. We had a pretty good 1961 team that might rank up there. But, this year we are dominating most everybody we played (save a couple close ones against OM and LSU). If we are the first 15-0 team dominating the PO's then maybe you can put them in the top 5.
