For the same reason she remains a collie: tradition. Never over think why Aggies do things. If something was done in the past, we will generally continue with it as a tradition.

Reveille I was a mutt that some cadets hit with a car and brought back to campus to nurse back to health. Plan was to hide her in the dorm but she barked when reveille was bugled the next morning. She got adopted as official mascot when she got loose and led the band out onto the field.
Someone later donated a collie to be Reveille and they've been collies ever since.
