I'd love to do something similar. I guess that's why I remember that guy's story. The problem is learning that trade and there's no where I can go learn it.

Honestly, it's all about trial and error. There are very few secrets outside of spices, fat content, etc. YouTube is an awesome resource, as well as Michael Roulman's book "charcuterie," which is a must have if you are interested in the craft.

I like the idea of being mobile for my next business venture. I start an electrical apprenticeship next month. The idea of learning a trade appeals to me and being mobile is appealing as well. It'll come in handy when/if we decide to sell and move in the future.

Atlanta needs (badly) a second newspaper. The current one, the Atlanta Journal-Constitution is complete SHITE. Since the Journal and the Constitution merged, its a one paper town and the quality of content is complete crap.

Do yourself a favor. Take a trip to Lafayette, LA and visit Red's healthclub. Then copy the concept in Houston.

While you're in the area, find the son of a cajun specialty meat market owner who's tired of working for his father and offer him a buttload of money to open up his own shop in Houston. Then, proceed to eat boudin and print money.
