British thing. Fish & Chips needs that malt, and it is excellent.

Catsup? You are one of two people in this thread to choose this spelling for what is commonly referred to as ketchup. Why? Just to stand out a little maybe?

Assuming the thread is still on the rails, I've always thought vinegar on fries was an eastern thing. I saw I much more in NC and VA than here in KY.

no man. vinegar is great on a lot of things. potato chips with vinegar is awesome. a drop or two of vinegar in gumbo's or soups is also highly recommended. the trick is not to overdo it.

Its a british thing. Proper fish and chips requires malt vinegar

This ^^^^

And it is every bit as much a Southern thing as anything. There is nothing closer to pure old-fashioned English than Southerners. And there ain't a fish camp in South Carolina that serves fried catfish, hush puppies and fries without having malt vinegar on the table.

Which is made mostly of vinegar.

It's all about adding that little cut of acid to balance out the salt. The heat is just a nice bonus.

I'll say it again on the fries subject, ketchup (or catsup...still used in parts of the south) and vinegar serve the same purpose on fries.

Fish and chips and vinegar is a British thing. It has been retained in Canada and to a degree New England.
