What sort of events/shows/excursions would you recommend for a young married couple, no kids?
We'll basically be halfway between Asheville and Gatlinburg so anywhere in the area is fine.

Go to Biltmore in Asheville. Your wife will love it. Gatlinburg is a clusterfrick.

Build a campfire, eat some mushrooms, sit back and relax.

Asheville. Pigeon Forge and Gatlinburg are a corny tourist trap

This. Unless you are into touristy shite.

Absolutely not.
Biltmore looks really great. Looks like I have to buy daytime tickets, and get dinner reservations separate?

They're fun if you have kids, especially Dollywood, but not for a young married couple.

Dollywood is pretty fun. That's about it

I know the area well ... make the trip through there regularly, at least once a month.
Asheville has basically become the San Francisco of the east coast in terms of ... well, San Fran type stuff. Large gay community, open pot use, artsy fartsy stuff.
Biltmore is a good call if they are open right now, I'm not sure they are but they may be.
There's not a lot to see along I-40 between Asheville and Gatlinburg unless going through a couple of tunnels is exciting for you.
Once you get to Gatlinburg there is a lot to see ... I like the big knife shop not far from there personally, but it's custom made for tourism, all that area is ... kinda nuts, most locals don't like what it's become.

downtown Asheville. Fantastic restaurants.
It's SB weekend and Carolina's in it, IDK if that makes a difference one way or the other.

Go to Asheville
Eat at Curate or Corner Kitchen
Drink beer at Wicked Weed (they also have good food)
Catch a show at Orange Peel if they have a good band in town
Otherwise, wander around...there are a ton of good places in Asheville. Easily the best Appalachian city.

Not that we would ever do such a thing

I'm not much of a show person, but I would spend my time between Sevierville/Pigeon Forge, and not spend much time in Gatliburg, unless you like to walk. Same shopping available all over the place.
I do enjoy the Apple Barn for meals. Great food, good shopping, unique crafts.

Biltmore is great. I really enjoyed going to the barns at the back of the property. Beautiful landscape.
