Both are slurs intended to demean and get a rise out of a certain group.

The biggest difference is most white people don't give a shite if you call them a cracker. If people in general stopped responding to racial slurs they'd largely cease.

The addendum to that is "cracker" is also a non offensive noun used in every day conversation. There is no ambiguity when it comes to the n word.
