I had a similar experience at Tyler when I was at State. Wasn't a big fan of there or Harvey's. I loved the Veranda. Those cheese logs dipped in ranch are the tits.

If I had a restaurant in Starkville, students would never make up the core of my BOH staff for that exact reason. There is plenty of unskilled labor in the area that you can train up to be quality line cooks. Pay them well and you'll have loyalty and a core that will keep your consistency where it needs to be. Add your students who are culinary interested around them.

If you look at the uppity clientele that pack that place on a Friday and Saturday night, it's not me that's putting it on a pedestal.

You would probably do well with that philosophy. I lot of the restaurant owners in the area do not appreciate their workers very much.
