Probably where they smoke the meat.
Every BBQ place in existence will have a fire there at some point. The fat and grease just builds up to the point it is pretty much inevitable.
They all know it so the smart ones cook in a detached structure so if/when it goes it doesn't take out the main facility too.
Dreamland in Montgomery has only been open downtown a couple of years and they've already had two. Helluva show. They recently moved to a different building so they could put the cooker outside because (while they don't say it) it is all but certain to happen again.
I'm a vollie FF in a small town. At one point, we had 2 BBQ resturants (one since closed). I've been to that same fire at them at least 4 times.
