This is true. There are a lot of reasons why you can't compare players from different eras.
1. Players are bigger today
2. Players are faster today
3. Players are stronger today (Better trainers)
4. Players know more about nutrition today
5. Different philosophies about offense and defense
You can go on and on. PROBABLY the Herschel of yesterday would not be as dominating today. However, if you place that Herschel in today's game with today's training, coaching, nutritional knowledge etc he might would be as dominating. It's hard to say.
All we can do is see how dominating a player was against that current days competition and judge it based off that. Herschel and Bo Jackson are the best of all time, probably. I don't think any running backs dominated their games like they did.

He would also not play against 10 man boxes because his teams would at least have the threat of passing in a more modern offense.
