It would be great to have two, dare I even dream, or three quarterbacks who might be able to take the field and not make me cringe every time they throw the ball.

That's a good thing in practice. Just not so much in the season opener against a top 5 team when only 1/3 is worth a shite

You must have vast experience in nutrition and diet. I can tell by your lack of understanding of what carbs are for, and training as hard as an elite athlete does and being carb deficient would destroy muscle as well as fat.

I am a believer in the ketogenic diet. It's hard to start and even harder to maintain for a week, but once the carb withdrawal wears off, the body can actually perform at a high level. Not to mention there are so many plans out there that you reach ketosis without really missing the carbs. 10 days on 10 days off, week days on, weekends off, etc, your you can make your body adjust to your own needs. High fats and protein can overcome the lack of carbs though and it won't sacrifice your muscles as long as you continue to work out. Many body builders do it to cut the body fat off before their shows. Otherwise, high amounts of protein and carbs can make even the most disciplined bodybuilders look puffy.
With that said, I probably wouldn't want an OL doing the diet.

I said last offseason that he could be a much bigger weapon for us at WR than QB. He's obviously not an adequate every down QB, but his skill set opens up the offense in other ways, especially if he's a real threat to catch the ball.
You could run speed sweeps with him from his WR spot and turn that into a very unique RPO. He could put a lot of pressure on a defense which would help open up the offense.

I have said that he is likely the fastest man on the field and he should be utilized. WR, speed sweep back, or return man all are options. Just need to make use of his skills. It should also appeal to him since he is likely 4 or 5 on the QB rotation and not likely to move on at that position.

And are we still discussion another QB, who at one time was the best thing ever, and how great of an idea it would be to move him to receiver?
