Djrichiep -- he mentioned Striplings and Salt Lick. They are across from each other Hwy 300 at Lake Blackshear in Warwick. The stores are run by brothers that used to both be at Striplings, then they had a falling out. Striplings moved across the road and the original spot was renamed Salt Lick.

We still have seveal pounds of Stripling's medium vacuum sealed in the freezer, but Mrs Vox and I learned DIY from Rusty at Pine Street Market.

Striplings.

Haven't had any in a few years though. Need to make a trip.

Anyone ever try M and T Meats in Hawkinsville, GA? If you are close by, you guys need to check them out.

They have a jalapeno and cheese sausage that is excellent. They stuff it with cheese and is so good. The only thing about them is you gotta cook them low and slow is so that they don't pop have have the cheese run out.

I hate sausage as it usually are bland and taste "off" to me. But these are soo soo good. I haven't met anyone who has had them and didn't love them.

I use all of the lesser ducks (spoonies, widgeon, ringnecks, scaup) that I shoot every season in a pork based sausage that is pretty good. Very different though than anything most people have ever eaten. Snow geese work well also....


I learned how to make fish bratwurst from a Marine Biologist in Munchen who holds a patent for the process and it is unbeleivably good. Sort of similar to Munchen Weiss Brats but a much "lighter" flavor. In Germany we used Hecht (Pike) and White Fish (a general term for any type of "trash" fish that are not very good table fare) and I used the Franconian (mirror) Carp in the recipe also but Germans would consider this akin to a texan using Rib Eyes for ground beef (they love them some Carp in Bavaria....not the same animal we know in the states but very close).

I know that bowfishing has become very popular in the states and the vast majority of the fish taken are thrown in the garbage because they aren't fit to eat....but they would make a really good bratwurst....especially grass and common carp because they have enough fat to limit the amount of poultry fat needed....Buffalo's and Gar would also work well but they don't have the fat....

I mentioned both, or someone else mentioned both?

Any way, yep, I know about the Salt Lick / Striplings split up deal. Striplings was where Salt Lick is now, built a new place down the road and opened up there. Heck, I remember when Striplings was downtown Warwick, that family has been a staple in Warwick longer than I've been alive.

The stores are run by different sets of brothers, right? The Hardins have SSK and the Krauses have SL?

If you are ever driving through the Carolina's try to stop in at a grocery store and get your hands on some Neese's. I grew up on the stuff and to me it's still the best breakfast sausage I have ever tasted. Nothing was ever as good when I lived in georgia and couldn't get it and you won't convince me that anything as good exists.

Have family in Atalanta and Savannah and may be heading back to Tybee in the next month or so. Last time I was down there had something called "Hot Georgia Night" or some such from a place between Macon and Savannah. Trying to remember who made it and it made me think if I should check out some local goodies on my next trip down.

Family in southern SC so anything in that area would be good to know too.
