In the Czech version, the "pastry" part is closer to a sweet dinner roll than to cake, rather like the sweet Hawaiian bread. (Not a perfect analogy, but the best I can come up with.).
The fruit filling is like a cross between preserves and jam. Closer to preserves. Usually there is very large-grained sugar crystal on top of both.

Hmm...that's exactly what I had in STL. Good stuff. Maybe it wasn't a Bosnian joint.

This probably means I'm an a-hole, but the first thing I thought when the West, TX fertilizer plant explosion happened was "shite, I hope we can still get kolaches there."
ETA: To the OP, I think Arkansas at Georgia or LSU at Florida. Honestly, though, I expect Arkansas and LSU to win both.

One nice thing about being an Aggie is that two of the best sources for kolaches (Caldwell and Snook) are less than a half-hour away.

Me, too. Pretty sure every dallas Ag with season ticks was thinking along the same lines.
