I really like the maroon helmets with the outline of the state....Those look very sharp.

Maybe for the same reason that all the A&M schools were known as ____ Aggies. When OSU was Oklahoma A&M they were the Oklahoma Aggies, Same for us. We have always been the Aggies from Texas aka Texas Aggies.
