Because week 2 rankings are always an accurate indicator of who's good and who isn't. And apparently being ranked higher also means you have more talent. 
UT was favored going into the game and picked by most to win without too much of a struggle because of our talent advantage. And we did because their DB's were no match for the speed and physicality of our WR's. Very few coaches could have won that game as Cincy's coach because of the talent gap.
Edit: turns out, you're just a dirty fricking liar. I checked, and indeed, Cincinnati was not ranked when that game was played.
