Basketball: Florida and lately Arkansas is back on.
Football: Tennessee? Mississippi State? Vandy? Depends on who you ask. There are reasons these are all non-rivalry rivalries. Most UK fans would say they would get the most satisfaction out of beating Tennessee or Florida for obvious reasons.

I opted to ignore your list mandate because 'Murica. Deal with it.

A better question to me is this: As a fan, would you get more satisfaction out of beating a weak rival(you naturally assume a win), or a team that is highly ranked and very strong. I think the answer is obvious if your team wins both and is also obvious if your team loses to both.

It depends which generation of UT fan you talk to.

You'll mostly get Florida for the younger fans.

You'll mostly get Alabama for the older ones.

It doesn't matter because UT can't beat either of them anymore.

No, the better question is does beating a strong team offset losing to a weak one?

I remember the ecstasy of beating UF in '97 quickly followed by the agony of losing to Mississippi the next week.

There are teams I want to beat more than other teams and there are teams I don't want to lose to more than other teams.

I'd be hard pressed choosing between beating A&M and losing to Bama or Beating Bama and losing to A&M next season.

Highly ranked and very strong (in comparison).
Especially when you do it with only 2 completions.

No lists. Simply name your school's biggest non-instate foe in the SEC.

I'll start. Florida...obviously

Shouldn't that be non-out-of-conference instead of non-instate? I know you're thinking of OOC foes like Clemson, FSU, GA Tech, Louisville etc. but other schools have in-state rivals that are in-conference (AU-UA, OM-STATE, etc).

Auburn. The Georgians make me sick.

Will not be truly Georgians until they put us on Eastern Time Zone. How can some cities in your county (and those around it, all in Alabama) that are 10 minutes away be on one time, but you on the other? Loved going to Auburn though during fall back during Daylight Savings. Not one...but two extra hours of sleep if you were from Georgia. Confusing though.
