I think you know the answer for basketball. KY is everyone's biggest rival. Florida has a way to go before they knock KY out of that position.
In football (even though we have been to 3 back to back bowls) no one considers us a rival. Therefore, we consider everyone an equally hated rival.

I think SunSports gets one UF SEC game per year. As for Saturday, I agree that one sucks, although CBS made UF-UK at noon as well for some reason.

LSU @ Kentucky is on ESPN Saturday
I would assume Florida playing anyone outside of Auburn and a few other schools would be on ESPN or ESPN2
The problem probably has more to do with the lack of possible ratings
