Why does the SEC do this every year? They have 3 SEC games all playing at 1:00 EST, yet nothing until a 
PAC-12 game at 5:00 and a slightly better Big-12 game at 8:30. Why not stagger the SEC games?

blame ESPN and the Bowl Game Committees.
Cotton Bowl was a 11AM kickoff for many years.
Until Jerry Jones came along, swiped it from the Cotton Bowl and put it in Jerry World.
He also gave it his own timeslot(primetime) on a day when there are no other games being played.
The Cotton Bowl Classic was dying a slow death before Jerry. After Jerry, it is the odds on favorite for the next BCS bowl and/or playoff site.
