"I had cow tongue. It was a dessert, and it was in Louisiana"

Louisiana gets alot of mentions in the article. Not bad though, mostly.
What's the weirdest thing a family has ever served you on a recruiting visit? Is there anything that you've just had to power through?

Tennessee's Derek Dooley said he isn't a picky eater, so he has no problem sitting down for a nice home-cooked meal.
"I absolutely love eating. There's never been a meal that I haven't enjoyed. And I especially enjoy when you get into some local cuisine. Probably my favorite part of recruiting south Louisiana is going down there and getting a good authentic Cajun meal. What I enjoy the most about those are the coaches who come with me, who have to, as you say, power through it. I purposely go back and get seconds and thirds, so they have to keep up. I haven't had a meal I haven't liked yet."

And LSU's Les Miles had to politely scarf down some cow tongue.
"I had cow tongue. It was a dessert, and it was in Louisiana. It was pickled. And it looked just like a cow tongue. In fact, it was cow tongue and cow lips, for that matter. Everybody took a little sliver. Kind of chopped it up good. And... it tasted pretty good. It really wasn't all that bad. It was kind of a little briny. But, you know, I kind of enjoyed it. How wonderful it is that you're in their home, and somebody wants to be hospitable to you. Why wouldn't you want to be a good visitor?"
quote:
Kevin Sumlin: I had a family feed me something that, to this day, I don't know what it was. All I know is my mouth was on fire for at least 45 minutes afterwards. The player ended up coming to Houston, and he still won't tell me what it was I ate.

I'd do like Sumlin. Scrape it on an assistants plate when nobody was looking.

I've had cow tongue before at a Cuban restaurant in the keys
It was... Ok. You could actually feel the taste buds they were so big. That's what I didn't like about it

Marrow is delicious.
I've had squid cooked in it's own ink. Terrible
I've had head cheese before, but I'm just not huge on the gritty texture and large amounts of iron.
We've served a family that went down to the beach with us stingray once. Now that is delicious.

spread on a nice crostini. Awesome.
I'd try tongue, probably just once though.
Based on that article, I don't expect coaches to stop recruiting Louisiana any time soon, even if the football talent dries up.

I know some places serve skate under the name of scallops. I'm assuming stingrays taste similar to skate?

It can't be worse than bonito

That's just a mackerel isn't it?

Yeah, but it's absurdly bloody to the point of being inedible. We've tried a million different ways of cooking it. We've filleted it and trolled it through the ocean to try and clean it. Nothing works. shite's terrible.
And you always catch them when fishing for king or spanish

Idk. I've never had skate. These were stingrays we speared ourselves out in the gulf early in the morning. Just satayed it with some salt and pepper and served it on Some bread my brother made with herb butter spread for an appetizer.

Spanish Mackeral is my least favorite fish as far as taste goes.

Lengua tacos are the bomb!

Spanish fried or grilled is pretty bad. I like it though blackened or en papillote
