Louisiana gets alot of mentions in the article. Not bad though, mostly.

What's the weirdest thing a family has ever served you on a recruiting visit? Is there anything that you've just had to power through?

I've had marrow before. Never tried tongue though. Sounds interesting.

i figure its best, when eating any authentic cajun food, dont ask whats in it. just eat and enjoy

I've had cow tongue before at a Cuban restaurant in the keys

It was... Ok. You could actually feel the taste buds they were so big. That's what I didn't like about it

Marrow is delicious.

I've had squid cooked in it's own ink. Terrible

I've had head cheese before, but I'm just not huge on the gritty texture and large amounts of iron.

We've served a family that went down to the beach with us stingray once. Now that is delicious.

Based on that article, I don't expect coaches to stop recruiting Louisiana any time soon, even if the football talent dries up.

I know some places serve skate under the name of scallops. I'm assuming stingrays taste similar to skate?

Yeah, but it's absurdly bloody to the point of being inedible. We've tried a million different ways of cooking it. We've filleted it and trolled it through the ocean to try and clean it. Nothing works. shite's terrible.

And you always catch them when fishing for king or spanish

Idk. I've never had skate. These were stingrays we speared ourselves out in the gulf early in the morning. Just satayed it with some salt and pepper and served it on Some bread my brother made with herb butter spread for an appetizer.
