The line might be set as a pick-em initially because the general public is often a bit dumb and tends to drastically overvalue bama. Remember last year, bama was about a 10-12 point favorite initially and AU covered the spread by an average of two TDs for the entire year.
Vegas sometimes has to set shitty lines because a lot of people are stupid. Sheridan is an idiot most of the time, but it appears he is saying his opinion is AU is a much better team than bama, but the line would be a pick-em taking into account the betting public.

That would make sense, but he is an oddsmaker. So when he says the line would be a pick em, thats what he would set it at.
