I see your point but I'd also point out that in the 90s we had an incredible stable of backs that didn't play 3 years. Those RBs were monsters but they only played their JR. and sometimes SR years. I'm sure others had RBs stables like this too as it was more common for upperclassmen to play while underclassmen waited their turn.
That's why a guy like Hurd who played almost 3 years was so close to breaking the school record for total yardage despite the fact that he wasn't half the back of Cobb, Webb, Stuart, Henry, or Jamal Lewis etc.

In a 13 game schedule 1000 yards is like 76 yards per game. Not that difficult. Walker is the only impressive one.

This is where your logic is flawed. Most of the recent great backs in the SEC only play 3 years. Most are a back up their 1st year.

JJ "James Johnson rushed for 2,452 yards in two years at State.
1997 - 1,069 yards
1998 - 1,383 yards
He was injured in the Bama game and basically missed the Egg Bowl and the SECCG against UT in 1998. With a healthy JJ Johnson playing against UT, we may have beaten UT (we almost did anyway with out him) and ruin their march to the NC that year.
Still a two year total of almost 2,500 yards is impressive. Prior to State, He also played Juco ball at EMCC. Of course that was well before the current "Last Chance U" that is featuring Scooba Tech in the present day.
So for a two year player, he has to rank up there at the top.

TJ Yeldon was like 60 yards in his last season from 3 straight 1000 yard seasons.
Had he not been injured in a few games, he would have easily got 3 straight 1000 yard seasons.

Derrick Henry had over 2200 yards in 2015 alone. What does that say for him?
McCaffrey had 2000 and LF7 had 1900

Actually he was his last year.
Look at Barry Sanders last year at Oklahoma
state. One of the greatest single seasons ever.
Good enough to tip the Heisman to a player on an average team.
Very few times has the Heisman went to a player on a team with more than 2 losses.

Of Auburn's top 10 rushing leaders, 6 of them played together (Ronnie Brown/Cadillac; James Brooks/Joe Cribbs; Bo Jackson/Brent Fullwood). Bo also had Lionel James in the veer with him. That is a lot of carries that were split. If any of those guys played by themselves, they'd be on your list. Its all circumstantial.

Only player I can say that moved the needle that much was Charles Woodson. That is with a modern ESPN. Barry Sanders in 1986 did not have all day massive sports channels.

I have did a study about running backs the greatest running backs are usually born and raised East of I 35 and south of the Arkansas River to the Gulf and West of the Louisiana Mississippi state line.
Pretty much all of Louisiana, parts of Oklahoma and Arkansas and the populated area of Texas.
No other area has produced as many great RB's as here.
