I've always thought the whole gatekeeping over what isn't BBQ and what is as very odd but I agree all are generally good in their own right

I've never understood why people press down a brisket like it's a sponge and squeeze all of the juicy goodness out of it.

Agreed.

Maybe this is why pork is more common. Most places and halfway decent pitmasters can land pulled pork or even spare ribs. You gotta nail brisket or else you gotta chop it up and sauce it up then throw it on some bread.

Yep. There's room for all of God's children at the smoker - pigs, cows, yardbird, fishies, etc.

I think pork is more common because it's what we raised in the South and it's generally cheaper than beef. Remember, BBQ was born out of necessity. It's actually poverty food. It's taking tough cuts of meat and slowly cooking them to tender deliciousness. It's not luxury food, nor is it supposed to be.

True. Brisket was once throw away because it was so tough. It was given to the ranch hands and they figured out low and slow made it tender and edible. And voila!

Same with creole food. They would cook some horrible kinds of meat and would cover it up with spices out the wazoo.

Same thing with chicken wings, from what I understand. Prior to those fine folks in Western New York fryin' 'em up and coating them in a delicious sauce, chicken wings were discarded or used for stock.

I like all types of BBQ, and don't feel one way is the right way.

I just want it done correctly, tenderness, taste, visual, etc.

I am a long time BBQ connoisseur. I have tried all of it.

Don't care much for chicken and brisket tends to be too dry.

Nothing beats a good, moist pulled pork sandwich.
