It's not.

It is North/South.

It was built into a natural valley between the Old Campus (to the north) and the Ag Campus (to the south)creating a natural choice for the location of the stadium. This natural valley resulted in reduced costs, as stands could be built on the rising sides of the hill...

Commonwealth Stadium in Lexington Kentucky also runs east to west...

For Sanford, it's because the stadium is built into a natural valley (Tanyard Creek runs under and irrigates the Stadium grass, FYI)and the orientation of the valley is such that the stadium runs East-West. They weren't exactly concerned with the effects of the sun on the playing field in 1929

USCw is east-west as well.

It is a big deal because east-west alignment impairs player vision what with the sun and all.

Regarding Kyle Field, it is an abomination in so many ways.

OP needs to look closer at the map. It is N/NW - S/SE, i.e. much closer to N/S than E/W

No clue on Kyle. It literally started with some wooden stands and barbed wire and has simply been expanded on ever since. Probably weren't thinking long term 108 years ago when they basically took some Ag land and Mr Kyle donated some money for a small set of wooden bleachers for 500 people and a fence. They also kept building around the stadium so odds are it just got set going in that direction.

It does provide a natural home field advantage with the Ags in the shade and the visitors in the sun at certain times.

It may have also been done to align with the nearby railroad tracks (and later with the major roads like Business Highway 6).
