When I saw the play, I immediately told my dad it was a dislocated elbow.
However, I don't understand him being "day-to-day" after that sort of injury. The Broncos ILB DJ Williams suffered the same exact injury, and he missed the first 2 games (possibly even the 3rd game today).

Doubt it.
After the game, Saban said "Day to day", "Questionable for the next couple of practices and the next game", etc.
We'll probably get an update in the Saban's Monday press conference.

I'd be surprised if he played against UF. most players with that injury miss closer to a month and come back with a big bulky arse brace.

Mosley isn't technically a starter. Nico Johnson is the starter at that position in "regular".
But we rarely play "regular".
Nico plays most sure rushing downs because he's better at stopping the run.
CJ plays in most of the other personnel packages because he is good in coverage and good at batting down passes at the line of scrimmage.
His absence will cause Trey Depriest to get more playing time.
