This is an interesting read from the Wall Street Journal: LINK. It shows the win/loss records at seven major college programs for the three years following an abrupt coaching departure like the kind UT just experienced. Most of the programs suffered through a disasterous stretch.
SCHOOL --- COACH (YEARS) --- NEXT 3 SEASONS
California --- Steve Mariucci (1996) --- 8-25 (.242)*
Kentucky --- Guy Morriss (2001-02) --- 9-25 (.265)
Oklahoma --- Howard Schnellenberger (1995) --- 12-22 (.353)
Washington St. --- Dennis Erickson (1987-88) --- 13-20 (.394)
Minnesota --- Lou Holtz (1984-85) --- 14-18-2 (.441)
Alabama --- Dennis Franchione (2001-02) --- 20-17 (.541)
Texas Tech --- David McWilliams (1986) --- 20-13-1 (.603)

They won't be great, that's for sure. Even with Kiffin staying, they were still in a major rebuilding mode, with holes all over the depth chart. It will be worse now, with recruiting likely in the tank for 2010.

Based on those numbers, going .500 over the next three may be the expectation.
