For my own taste,Morricone and T-Bone Burnett, even though, T-Bone is half composer/Half more of a producer, his soundtracks are great.

John Williams - easily the best movie guy for me and the only one I have on my iPhone, other than the guy who did the score for TV's Lost - Michael Giacchino - which is easily my favorite of all time.
