Cool story.
To everyone else, thanks for the insight. The family and I love Tapas and are looking forward to checking it out. My wife being European will undoubtedly enjoy a good wine selection if offered, so that's a big plus.
I could eat traditional spanish tapas with olives, block cheese, artichokes, heart of palm, sun dried tomatoes, avocados, capers, sausage, bread and olive oil, dates and prosciutto, etc. all day every day.
I'm sure we won't be regulars at this joint, but I'm looking forward to checking it out.

I've fell in love with The Pig & The Pint. Incredible BBQ, amazing selection of beers. The wife loves Parlor Market, but I've never made it out there. Julep has some amazing dishes, but aren't consistent enough for me. Good bartenders though.
Jackson's food scene is extremely underrated.

Probably a difference in our age. I know people like Collins and I get why. I don't get the need for there to be another one when there already isn't enough variety of bars in this part of downtown. I'm also not the type of person to spend $10 on a drink when I'm out. I'm not enough of an adult for that at the moment.

Saltine's
Char
Majestic Burger
R'evolution
Tay's BBQ
The Local 463
As for Babalou's it is actually pretty good and IMO inexpensive. They based the concept off of Rick Bayless' (and yes his brother is Skip) restaurants in Chicago. The HQ for the group (Amerigo's, Babalou's, Table 100 & Saltines) is out of Jackson so I imagine the food quality will be much more consistent
