Agreed 1000% but some people call what I described "okra gumbo", it's okra soup or smothered okra & tasso to me.
Also, you don't have to wait till spring, buy 6lbs of frozen cut okra (this fits perfectly in my medium magnolite roaster) & smother that down with onions (add a little vinegar to cut the slime). It's not as good as fresh okra but it ain't bad either. It also freezes well.

I prefer to rock it out with fresh okra.

I'll probably do a trial run with the frozen stuff to try and get it just right and then be ready to roll when all the fresh okra starts rolling out.

Throw in the okra and season with kosher salt and pepper and cook for about 3 minutes. Toss in sesame seeds, or toasted sesame seeds.

So good.

If it doesn't have okra, it's not gumbo.
In fact 'gumbo' is a derivative of the African word for okra.

Definitions change all of the time.

It must have a roux. Okra or file are welcomed thickeners. As I mentioned earlier, a chicken and Sausage gumbo with file added at the table is fantastic.

I do struggle to imagine a seafood gumbo without okra though. That's the beauty of the soup though, different things thrown in a pot done with the spirit of French and West African cooking.

I'm making some gumbo as soon as we get our first cool snap.
