There's not a terrible amount of difference between pinot and merlot. Cab has a distinctive taste to it and is different. Cab definitely goes better with food than by itself

And Pinots, Merlots and Cabs are different grapes, with varying levels of sugar, tannins and flavors. Cabs are the most full bodied of the 3, with Pinots being the lightest. That's not to say they are thin tasting, but just a lighter body.

I don't like bourbon or rum. I like a good Chilled Grey Goose if I have alcohol.
Plus I don't drink much due to having only 1 kidney so get off me before you start up.

Depends on what you're serving. Prime rib? Cab or Merlot. Poultry? I'd go with the Pinot. Generally. White sauce doesn't really make a difference. It's about the heaviness of the dish you're serving and what your personally like.
