A place I used to eat at when I lived in Texas served a Texas omelette. It its a huge omelette filled with cheese and jalapeños, topped with Texas chilli and a dollop of sour cream. You can feel your cholesterol rising as you eat it. It is awesome.

I have to say, a lot of things in Texas are vastly overrated by its inhabitants *coughbbqcough*, save for their chili. Texas chili is top notch.

The breakfast at Renaissance Ross Bridge hotel in Birmingham is the best breakfast I've had in my life.
