I went to OK Joes, waited an hour, and ate...BBQ.

Turns out that when you smoke the same cut of meat for 8+ hours in MO, LA, TX, etc., it tastes about the same.

Good BBQ is awesome, but can only be so awesome. The places that claim to have the best probably dont have much else to brag about.

Texas beef ribs are damn near as good as it gets (followed closely by vinegar based)

I could be wrong, but I'm pretty sure the American Royal in KCMO has nearly twice as many contestants as Memphis in May. The year I competed there were between 500 and 600 teams in the open. The KCBS is definitely the largest competition sanctioning body.

ETA: I grew up in KC and it is not my favorite style - too sauce focused. LC's is my favorite KC BBQ. Top lists usually get this stuff wrong.

Going to Sugar Shack in Sunset Beach, NC in about an hour. Their Ribs will make you slap yo momma, and bitch slap any of that Mizzo bullshite.

Amen to that.

Pork is a sweet meat, no need to pile on the sweetness. A little acid to cut the richness and sweetness and some heat to liven it up. It's a balancing act, but some sour should be front and center.

The mustard sauce from South Carolina can accomplish this too, but sometimes they are a little too heavy handed on the mustard.

Good BBQ is good BBQ no matter where you go. I've had KC, STL, Memphis, and Carolina and they were all delicious.

I've never had Texas BBQ but a buddy of mine from Fort Worth and another from Denton told me that Texas BBQ is jack of all trades, master of none. I'll try to see for myself when I'm down there for the aTm game.
