There are two basic types of Mardi Gras in Louisiana; the "Cajun" type is traditionally poorer folk from the Acadiana region (the old displaced French Canadians). These folks would have a community party and gather up chickens etc for feasting and revelry.
The New Orleans breed is traditionally more of a European version, and the krewe members traditionally are from old, elite New Orleans high society. Think: exclusive masquerade balls at mansions.
