So I applied to a few journals at my law school and I got offered a position to a few. When picking which journal to join, how much emphasis should I put on the prestige of the journal versus the subject matter I'm interested in? Any law school grads out there have any advice?

Why add more work to your plate? Law school sucks balls. Have fun during your spare time. If you want to litigate, what journal you were on in law school doesn't mean jack shite in the real world.

Do moot court if you can and work for a lawyer who tries cases if that's what you want to do. Go watch some real trials. Try to work for a DA or PD's office for 3-4 years after law school to learn your rules of evidence, voir dire, and how to try a case. Then go to the private sector.
And have fun.
*This is if you want to be in the courtroom trying cases. You said below that you want to go into international commercial law-so maybe someone else has a better suggestion in that line.

Where do you go to law school? What type of position are you looking for when you graduate?
A. If you attend a top school and are looking for big law, go for prestige.
B. Anything else, go with the subject that interests you or don't bother period.

Agreed that I'd need to know more about your goals to properly advise. I hated law review as a 2L staff editor and turned down a senior editor position as a 3L because I already had a job, got to be a student clerk on an appellate court instead (wasn't financially in a position to clerk after graduation) and wanted to spend more fishing:having fun. Also, I hated critchecking. Journal work really really sucks.

I'm at George Mason. I want to do international commercial law (I think)

If not law review, I'd look towards your area of interst given that it seems pretty focused. From my experience, employers consider anything other than law review to be the same/very similar. But I don't know the George Mason hierarchy and it may vary by school.
