Yes. Any acronym or word that starts with the letter u that gives a y sound reverts the acronym or word to an "a."
A university instead of an university.

In English, we generally go with what sounds best. An SEC...,,
A Southeastern Conference...
I haven't seen this in the thread yet: If an acronym is pronounced as a word, again you choose the best sound. For example, if SEC was pronounced like the "sec" in second then it would be, "Just a SEC championship."
I know nobody says that. It's just an example relating to the OP.

Using "an" just seems to fit before SEC. I've always wondered the same thing cnb.

An because the word "S" (as in that letter being used as a noun) is pronounced "ess". Therefore, as it starts with a vowel sound, the correct form should be "an SEC" not "a SEC".
