Just me spit balling, but I'd guess it might have to do with keeping your defense fresh and at the top of their game.

If you have 2019 LSU's offense going out there and scoring a touchdown every 4-5 plays, then your defense is never going to get adequate time on the sideline to rest, recover, and get some brief coaching adjustments.

No defense can ever outplay exhaustion and the other team at the same time.

The Dawgs are at their best when the defense does their job of limiting their time on the field by getting 3 and outs, while on the other side the offense does its job by allowing the defense to have a chance at resting on the sideline for a good chunk of the game with more methodical drives.
