The morning after a big fish fry we always had fish and grits. Man, fried catfish all mixed in with grits, butter, salt and pepper.

I shot a gator off the back porch when I was in college. More recently, I killed a snake on the tennis court by beating it with my racquet in the middle of my 2nd set.

Cracklins, smoked pork butt and some grilled boudin. Jalapeño poppers stuffed with garlic butter/cream cheese, wrapped in bacon and smoked. If I bring an iron skillet, I'd do grilled pimento cheese or fried baloney

I grew up on a cattle ranch/ farm in Texas and used to think I was tough until I moved out West and tackled the mountains out here...I've had all the Texan and Southern beat out of me over the years out here working and hunting in the Mountains..
