We replace 8 starters on defense.
Carolina replaces 8 starters on defense.
I feel very comfortable in saying that we are replacing our losses with significantly more talented players.

No we don't!
Tyler Clark, Julian Rochester and Johnathan Ledbetter, J.R. Reed and Deandre Baker all return.
Add to that the D'Andre Walker finished second on the team in Sacks and he is coming back...we are returning 5 starters and 3 more that got extensive playing time. (Tyrique McGee, Walter Grant, Jarvis Wilson) Add to them Richard LeCount who started the first couple of games at safety when we had an injury, and.....well, I think we will be okay.
ETA
People count Trent Thompson as a starter, but Tyler Clark probably played as much if not more than him, and started several games due to Thompson injuries and because he had passed Thompson.
David Marshall also got a ton of playing time.

Time will tell. No one really knows until they hit the field.
How much playing time did the backups to these 8 get? I don't really know.
