The vinegar/ketchup sauce is common in Lexington and other western Piedmont towns. In the east, it's vinegar with no ketchup. They also typically cook whole hogs in the east, while Lexington style is just shoulders. The place you went was probably Hursey's though it could've been Allen and Son which is closer to Chapel Hill. Allen is more eastern style, though they only use shoulders and Hursey's is a hybrid of the two styles. Both places are in the top tier of NC BBQ joints, along with the aforementioned Grady's.
