They actually have done that a couple times i.e. Vinnie Sunseri and Glen Coffee. The main reason why Coffee entered the draft after his junior year is because Saban told him that he would likely lose his starting RB job to Ingram and his playing time would be greatly reduced. Coffee never wanted to leave early to go to the NFL.

Try this on for size. Aside from Bo Davis (which was NCAA related), Saban has never fired an assistant at Alabama. You think Texas stole Applewhite to take a demotion as RBs coach. Or Michigan stole Nussmeier?

Well hell, he told a few players to come back for their final year and not enter the draft and Tim Williams/Ryan Anderson/OJ Howard/Eddie Jackson/Jon Allen wrecked shite in the SEC this season.
