The only thing negatively impacting celiacs is the over-reaction of some people who, for whatever reason, CARE that other people have decided to be gluten-free or grain-free.
There's a culture of ridiculing "gluten-free" eating for whatever reason. That leads to people who are genuine celiacs being ridiculed.
The upside is that every restaurant in the land has now heard the term "gluten-free", and that should help celiacs. The downside is the people who don't find any benefit of going gluten-free deciding that it is a term worthy of derision.
Do what you want. Let others do what they want. Its not that hard.
